Item An investigation of antecedents of organizational citizenship behavior in the turkish hospitality industry: A structural equation approach(Emerald Group Holdings Ltd., 2015) Bilgin N.; Kuzey C.; Torlak G.; Uyar A.Purpose–This paper aims to investigate the relationships between organizational citizenship behavior (OCB) and its antecedents–job satisfaction (JS), affective commitment (AC), organizational justice (OJ) and charismatic leadership (CL); the relationships among its antecedents; and mediating roles of JS and AC in the relationships between CL and OCB and between OJ and OCB in the Turkish hospitality industry in Antalya region. Improving OCB in the hospitality industry, as in other industries, plays an important role in increasing service quality and organization performance. Design/methodology/approach–The sample used for this study consisted of 768 employees working in 18 hotels (4- or 5-Star) in the Antalya region of Turkey. The data collection methodology of the study was a questionnaire survey which was administered through drop-and-collect methodology. The analysis methodology of the study was structural equation modeling. Findings–The findings indicated that both AC and JS mediated the relationship between CL and OCB, as well as between OJ and OCB. Guiding employees by charismatic leaders as well as securing OJ at workplaces in hospitality organizations in the Antalya region of Turkey contribute to OCB positively; however, JS and AC mediate this relationship. Thus, it is assumed that managers should take steps to improve the AC and JS attributes of their employees. In addition, unlike empirical findings in hospitality management literature, this research could not find any direct relationship between CL and OCB. Research limitations/implications–The present study provides practical implications for hotel managers who may be searching for ways in which to increase OCB and firm performance. The sample is confined to the hospitality industry, thus the generalization of findings to other industries might be limited. Hence, the authors suggest future studies which better enable comparison among various industries. Originality/value–The novelty of the present study arises from two points: incorporating a CL variable into the study’s model regarding the antecedents of OCB and investigating the mediating roles of JS and AC between CL and OCB as well as between OJ and OCB within the hospitality management industry. © Emerald Group Publishing Limited.Item Examining the religious tourism potential of Manisa, Turkey with a marketing perspective(Emerald Group Holdings Ltd., 2015) Kartal B.; Tepeci M.; Atlı H.Purpose – This paper aims to, by having a marketing perspective, assess the potential of Manisa for religious tourism and shed some light on the ways of increasing that potential and to add to the religious tourism literature and practice in general. Design/methodology/approach – A number of depth interviews were conducted with the experts of culture, tourism, religion and religious assets in Manisa. People and institutions regarding religious tourism were called, visited and asked for the names of right interviewees. As a result, a total of 14 interviews were arranged and successfully accomplished. In addition to depth interviews, top 15 most popular travel Web sites (www.ebizmba.com/articles/travel-websites) are examined for tourist and guide opinions toward Manisa’s religious sites and its surroundings. Findings – The findings indicate that Manisa has highly important religious monuments belonging to three major religions, including three of the seven churches mentioned in the Apocalypse section of the Bible. Many suggestions have been made regarding possible changes in products, referring to religious monuments and sites in this study, and other marketing mix elements like possible ways of promoting the product. Research limitations/implications – The findings are based on a qualitative study, which limit their generalizability. Yet, the sample of interviewees is fairly large and utmost attention is given to the selection of them. In the future, more stakeholders can be involved in the data collection process. Also, the views of general public on the topic can be investigated through surveys to determine the details of religious tourism activities. Practical implications – Preparations for selling souvenirs (like miniatures of religious monuments) and other religious and cultural goods near the sites of attraction can be made. In addition to selling souvenirs (e.g. miniatures, postcards), local food (i.e. Mesir paste, Mesir delight) and local drinks (i.e. Mesir tea, Sübye) can be offered at gift shops or stores to be opened next to religious monuments. Social implications – With the rising popularity of experiential and event marketing, tourists coming to Manisa to see religious monuments will be better off experiencing the atmosphere of these monuments. A specific team of experts from each related organization can be formed and an action plan be prepared to determine the steps to be taken regarding religious tourism. A wise planning and an effective implementation of religious tourism efforts require an intense coordination. Originality/value – Policy makers and managers who want to promote religious tourism need to determine the tourism products and services which appeal to a diverse types of tourists visiting any religious destination. Religious tourism products and services in other destinations can be offered in combination with such activities as camping, hiking and sightseeing or such other types of tourism as social and group tourism and adventure. Standard marketing strategies may not work for religious tourism because spiritual travel will take different forms and have different meanings. Promotional activities are utilized to make potential customers aware of products, induce demand and provide incentives to purchase. © Emerald Group Publishing Limited.Item Integrating multi-criteria decision making and clustering for business customer segmentation(Emerald Group Holdings Ltd., 2015) Güçdemir H.; Selim H.Purpose: The purpose of this paper is to develop a systematic approach for business customer segmentation. Design/methodology/approach: This study proposes an approach for business customer segmentation that integrates clustering and multi-criteria decision making (MCDM). First, proper segmentation variables are identified and then customers are grouped by using hierarchical and partitional clustering algorithms. The approach extended the recency-frequency-monetary (RFM) model by proposing five novel segmentation variables for business markets. To confirm the viability of the proposed approach, a real-world application is presented. Three agglomerative hierarchical clustering algorithms namely "Ward's method," "single linkage" and "complete linkage," and a partitional clustering algorithm, "k-means," are used in segmentation. In the implementation, fuzzy analytic hierarchy process is employed to determine the importance of the segments. Findings: Business customers of an international original equipment manufacturer (OEM) are segmented in the application. In this regard, 317 business customers of the OEM are segmented as "best," "valuable," "average," "potential valuable" and "potential invaluable" according to the cluster ranks obtained in this study. The results of the application reveal that the proposed approach can effectively be used in practice for business customer segmentation. Research limitations/implications: The success of the proposed approach relies on the availability and quality of customers' data. Therefore, design of an extensive customer database management system is the foundation for any successful customer relationship management (CRM) solution offered by the proposed approach. Such a database management system may entail a noteworthy level of investment. Practical implications: The results of the application reveal that the proposed approach can effectively be used in practice for business customer segmentation. By making customer segmentation decisions, the proposed approach can provides firms a basis for the development of effective loyalty programs and design of customized strategies for their customers. Social implications: The proposed segmentation approach may contribute firms to gaining sustainable competitive advantage in the market by increasing the effectiveness of CRM strategies. Originality/value: This study proposes an integrated approach for business customer segmentation. The proposed approach differentiates itself from its counterparts by combining MCDM and clustering in business customer segmentation. In addition, it extends the traditional RFM model by including five novel segmentation variables for business markets. © Emerald Group Publishing Limited.Item Development of an optical tyrosinase biosensor (TCA) for detection of “Parathion-Methyl”(Emerald Group Holdings Ltd., 2019) Polatoğlu İ.; Cakıcıoglu Ozkan F.Purpose: This paper aims to present a novel and cost-effective optical biosensor design by simple preparation method for detection of “parathion-methyl,” which is a model pesticide pose to public health and the environment. Design/methodology/approach: The optical enzyme biosensor (TCA) for detection of pesticide “parathion-methyl” was developed on the basis of immobilization of tyrosinase enzyme on chitosan film by adsorption technique. The analytic performance of TCA was investigated by measuring its activity with Ultraviolet (UV) visible spectrophotometer. Findings: Uniform porous network structure and protonated groups of chitosan film provided a microenvironment for tyrosinase immobilization evident from Fourier transform infrared (FTIR) spectroscopy and Atomic Force Microscopy analysis. TCA has a wide linear detection range (0-1.03 µM) with high correlation coefficient and it can detect the parathion-methyl concentration as low as 159 nM by noncompetitive inhibition kinetics. Using the TCA sensor both for ten times and at least 45 days without a significant loss in its activity are the indicators of its good operational and storage stability. Moreover, TCA can be applicable to tap water, providing a promising tool for pesticides detection. Originality/value: This is the first time to use the in situ analytical technique that can improve the performance of optical enzyme sensor provided to control the pesticide residue better with respect to traditional techniques. The effect of organic solvents on the performance of optical enzyme biosensor was investigated. Inhibition kinetic of the solvents rarely encountered in literature was also studied besides the pH and temperature tolerance of the optical biosensor. © 2019, Emerald Publishing Limited.Item An overview of biomolecules, immobilization methods and support materials of biosensors(Emerald Group Holdings Ltd., 2019) Asal M.; Özen Ö.; Şahinler M.; Baysal H.T.; Polatoğlu İ.Purpose: Traditional analytical methods are often time-consuming and require bulky instruments, making their widespread implementation challenging. This paper aims to represent the principal concepts of biosensors as an introduction of this technology to readers and offers a comprehensive understanding of its functions. Design/methodology/approach: The authors provide descriptions of the components, characteristics and advantages of biosensors along with the immobilization methods, followed by a brief discussion. Findings: A biosensor is an analytical device comprising a specific biomolecule and a transducer in conjunction with an output system. The biomolecule recognizes a specific target which leads to a change in physicochemical properties of a system. This biorecognition phenomenon is later converted into a detectable signal by the transducer. Biosensors can essentially serve as rapid and cost-effective devices with excellent sensitivity and specificity for critical purposes in innumerable fields, ranging from scientific research to day-to-day applications. Originality/value: Here, the authors explain and discuss the approaches and challenges with the aim of leading to an interest in biosensor development and improving their applications. © 2018, Emerald Publishing Limited.Item Performance analysis of Turkey’s participation and conventional indices using TOPSIS method(Emerald Group Holdings Ltd., 2020) Yildiz S.B.Purpose: The purpose of this paper is to rank the performances of two participation indices developed in Turkey according to Islamic principles and six conventional indices based on their risks and returns for the years 2015, 2016 and 2017. Design/methodology/approach: The performance of the two Islamic and six conventional indices were ranked using the technique for order preference by similarity to ideal solution (TOPSIS), i.e. a multiple-criteria decision-making method, and the weights of the decision criteria were determined using the objective weighting method called entropy. Findings: The results do not show any statistically significant difference in returns between the participation indices and their conventional counterparts. However, all analyses performed using various risk metrics revealed the lowest risks for the Participation indices. Furthermore, in the TOPSIS ranking for all of the years, the Participation indices ranked above BIST 100, which was selected as the benchmark. Social implications: Participation indices provide investors adhering to Islamic faith with opportunities through which they can comfortably invest with limited loss of financial performance for the study period. They also serve as a good alternative for risk-averse investors. Originality/value: The paper is distinguished by the criteria and methodology it uses for index ranking. Furthermore, it is believed to be useful for the limited literature on the Participation Index in Turkey as well as for national and international investors and institutions interested in Islamic indices in particular. © 2020, Emerald Publishing Limited.Item Consumers with vulnerabilities: in-store satisfaction of visually impaired and legally blind(Emerald Group Holdings Ltd., 2021) Celik A.A.; Yakut E.Purpose: The purpose of this paper, focusing on the visually impaired and legally blind consumer, is to explore the relationship between the perceived consumer vulnerability on customer satisfaction and the effect of satisfaction on the intention of repurchase and recommendation as the determinants of store loyalty in an apparel store context. Design/methodology/approach: A survey was conducted on 216 visually impaired and legally blind consumers in the province of Manisa, Turkey, concerning their apparel shopping store experiences to examine how the perceived vulnerability influences visually impaired and legally blind consumers’ satisfaction, recommendation and repurchase intentions. The data were analyzed using structural equation modeling. Findings: The results of the study revealed that as the visually impaired and legally blind consumers perceive themselves more vulnerable, they become more satisfied with the store, and that the more they are satisfied with the store, the more their intention to recommend that store and purchase intention from that store increases. However, the authors’ investigation showed no significant differences between the consumers who were born blind and who became blind later in their life. Originality/value: The paper contributes to the literature by extending the understanding of visually impaired and legally blind consumers’ perceived vulnerability in the brick-and-mortar stores and demonstrates how it is related to satisfaction as a major driver of post-purchase intentions like recommendation and repurchase. It also exhibits the fact that blind consumers – both congenitally blind and subsequently blind – cope with this vulnerability through their own solutions to go on their lives, and they do not perceive themselves as vulnerable, as it is perceived by the able-bodied. © 2021, Emerald Publishing Limited.Item Advantages of tax audit(Emerald Group Holdings Ltd., 2021) Avcı O.; Demirci Z.The favorable results of fiscal/tax policies implemented in a country depend on the accuracy of the declarations and the full timely payment of taxes. Tax auditing is the administrative function that ensures the accuracy of the taxes to be paid. From a global perspective, tax auditing is very important in all countries. Each country wishes to bring its own tax audit structure to an optimal level. Along with the audit, the tax function of the taxpayers and the investigations carried out on the books and documents related to these transactions, as well as, the exploratory function aimed at finding out and correcting errors, frauds and deficiencies, and preventing the occurrence of errors and frauds are in question. Ensuring the effectiveness of tax auditing will result in effective tax administration. Any increase in total tax revenues whilst keeping the expenses made for taxation at a certain level will increase the efficiency of tax administration. The tax audit, which is mandatory for the realization of the intended purpose, will also contribute to the tax compliance of taxpayers. Voluntary compliance of taxpayers who think that they will be audited in certain periods will be strengthened. All this can be achieved through an effective audit system. The aim of this study is to provide an assessment of the tax audit, highlighting its need and the things to be done in order to ensure the effectiveness and the advantages of the tax audit. © 2021 by Emerald Publishing Limited.Item Gluten-free cake with unripe banana peel flour substitution: impact on nutritional, functional and sensorial properties(Emerald Group Holdings Ltd., 2022) Türker B.; Savlak N.Purpose: This study aims to develop nutritious and functional gluten-free cakes for celiac patients by substituting rice flour with unripe banana peel flour (UBPF) (0%, 5%, 10%, 15% and 20%) and to propound some chemical, textural and sensorial properties of cakes. A secondary purpose was also to contribute to waste management of the banana products industry by reevaluating the peel. Design/methodology/approach: One-way analysis of variance and Duncan’s multiple comparison test (p < 0.05) were used to determine differences among the mean values. Proximate analysis, color, texture profile analysis, antioxidant activity, mineral composition and sensorial analysis were carried out. Data was analyzed using SAS software. Cake production was carried out in three replications. Findings: UBPF in this study had high protein (11.2%) and dietary fiber (18.3%) as well as high antioxidant activity. In all, 5%–20% UBPF-substituted cakes had enhanced dietary fiber (2.5%–3.7% dry matter), ash content (1.6%–1.9% DM) in comparison to control cake (1.4% and 1.4%, respectively). 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity of enriched gluten-free cakes increased by 102%–534%, whereas ferric-reducing antioxidant power increased by 29.6%–143%. Up to 10% UBPF substitution resulted in texturally and sensorially acceptable, nutritious gluten-free cakes. Practical implications: The developed product can be used practically for several applications as a healthy alternative. The use of unripe banana peel represents a promising strategy to increase the nutritional value and number of ready-to-eat food in the gluten-free market. Social implications: This study propounds a nutritious, functional and sensorially acceptable gluten-free cake for celiac people to use practically while socialization. Cakes which are appreciated by panelists in sensory analysis will create product variety in kitchens, markets and social areas, in particular for those people suffering from celiac and gluten intolerance. Originality/value: This is the first study to consider UBPF as an ingredient in gluten-free cake formulation. The product may positively contribute to the life quality of celiac people by propounding a gluten-free snack food for consumption in their social life. This study is also an example of the contribution of banana by-products toward the implementation of the circular economy. © 2021, Emerald Publishing Limited.Item Numerical evaluation of pedestrian-level wind and indoor thermal comfort of a historical monument, Muğla, Turkey(Emerald Group Holdings Ltd., 2022) Gençer F.; Karadağ İ.Purpose: The study aims to analyze both thermal and wind comfort conditions of a historical mosque's interior and outdoor spaces for the planning of further conservation decisions. Design/methodology/approach: The method is composed of two steps. First, thermal comfort analyses are conducted via Design-Builder Software. The predicted mean vote (PMV) and predicted percentage of dissatisfied indices were calculated and evaluated using the ASHRAE 55–2010 standard. Thermal comfort conditions are analyzed with the proposed three operations. Second, wind comfort analyses are conducted via computational fluid dynamics (CFD) software. Outdoor thermal comfort conditions are predicted by air temperature, mean radiant temperature, wind speed and relative humidity. Findings: The (PMV) in the harim was calculated as −1.83 (cool) which corresponds to a predicted percentage of dissatisfaction (PPD) equal to 68.54%. Thermal comfort was provided by daytime and continuous operations; however, intermittent operations did not provide thermal comfort. The wind velocities around the mosque are well below the 5 m/s limit value for standing defined by NEN 8100 wind nuisance standard. Moreover, the limit value of 2.5 m/s for sitting was also satisfied with more than 80% of the semi-enclosed area around the entrance of the mosque. Last comer's hall remains in a slight cold stress range, the rest of the areas have no thermal stress. Originality/value: This two-stage study creates a base for further improvements to provide comfort conditions in a historical building without interfering with its original features. © 2022, Emerald Publishing Limited.Item Development of healthier gluten-free chicken products coated with different cereal sources(Emerald Group Holdings Ltd., 2022) Uyarcan M.; Yayla E.; Akgül D.; İşseven D.Purpose: According to the dietary needs of celiac people and very limited variety of commercially available foodstuff, the demand for gluten-free products is increasing every day. Keeping this in view, the present study aims to develop healthier gluten-free chicken products by using different cereal sources and to determine the effect of substitution of wheat flour with gluten-free flours on quality of chicken products. Design/methodology/approach: Buckwheat, chickpea and rice flours were used as gluten-free flours for the production of chicken products. The physical (yield parameters, crust colour), chemical (proximate composition, caloric value, pH) and sensorial properties of coated chicken products were measured. Duncan's multiple range test and principles component analysis were performed. Findings: Gluten-free flours were significantly effective on yield parameters, colour, moisture, protein, lipid and caloric value of the samples (p < 0.05). The results showed that gluten-free chicken products had better pickup, lighter appearance, higher cooking yield and moisture, lower cooking loss, oil absorption, lipid and caloric values compared to commercial wheat flour coated control. Regarding the overall impression rank sums, the panellists were more preferred gluten-free products than control group. The samples coated with chickpea flour were best rated by the panellists. The results of the study suggested that the use of chickpea coating flour could be best nutritionally and sensorially suitable option for producing gluten-free chicken product.
